1. Ask the butcher to properly butcher the meat. You'll see from the photo the enormous chunk of fat that luckily my husband found when he was removing the silver skin that hadn't been trimmed.
2. Ask to have the weight of the meat included on the price sticker. This will help knowing how long to cook it and will remove any niggling doubts about the difference between the price displayed on the scale and the price of your bill.
3. Verify if the meat hasn't been frozen. In another visit here, we were told the steak was fresh and when we got it home we discovered it was still frozen in the middle.
